Ingredients

  • 0.33 cup raw cashews
  • 2.25 cups potato flakes
  • 1 cup whole wheat flour
  • 0.5 tsp sea salt
  • 2.5 cups chopped peeled white sweet potato
  • 1 cup chopped onion
  • 1 cup chopped red bell pepper
  • 3 cloves garlic (minced)
  • 1 tbsp fresh thyme
  • 1 tbsp fresh oregano
  • 2 cups chopped stemmed kale
  • 1.25 cups unsweetened plant-based milk
  • 6 tbsp nutritional yeast
  • 1 tbsp white wine vinegar
  • 1.5 cups oil-free marinara sauce

Steps

  1. 1Blend soaked cashews to make cream.
  2. 2Mix potato flakes, flour, salt, and cashew cream to make dough.
  3. 3Simmer sweet potato, onion, pepper, garlic, thyme, oregano in water.
  4. 4Stir in kale and cook until tender.
  5. 5Blend remaining flakes, milk, yeast, vinegar to make cheese sauce; add to veggies.
  6. 6Preheat air fryer to 350°F.
  7. 7Roll out dough, fill with mixture, seal edges.
  8. 8Air-fry 8 minutes until browned.
  9. 9Serve with marinara.
