Ingredients

  • 3 small red onions
  • 300 ml cider vinegar
  • 3 tbsp golden caster sugar
  • 1 tbsp sea salt flakes
  • 6 count black peppercorns
  • 6 count coriander seeds
  • 1 count star anise
  • 1 count bay leaf

  2. 2Blanch onions with boiling water; drain.
  3. 3Pack onions in jar.
  4. 4Pour hot brine over.
