Smoked Tri-Tip

A California classic, the tri-tip roast is perfect for smoking. Seasoned with Santa Maria style spices and smoked to medium-rare. Seared on a hot iron skillet for a crust, then finished with garlic butter. Sliced against the grain for tenderness.
